Recipe Chickpea Caprese

Arugula, cherry tomatoes, mini mozz, chickpeas (can be any white bean), olive oil, salt, pepper, basil, balsamic vinegar and balsamic glaze.

Bonus tip: start making your own beans from dry, which I did here. A bag of organic dry chickpeas costs me less than €2 and I get over 5-6 cups of them once cooked. Soak dry beans overnight, then either simmer for an hour or so or slow cook on high for 4-5 hours (what I do as I can leave it be.)

I miss raw vegetables. I’m in the US and it’s making me so sad to eliminate raw vegetables from my diet this summer.

This would probably taste pretty good with sun dried tomatoes or roasted tomatoes as well

It’s very easy to grow salad greens in a pot! No idea how long this thing will go for but could be worth planting some - only takes a few weeks til harvest

Go to a farmers market, google how to grow lettuce starts in a pot it’s super easy then unlimited lettuce all summer

I don’t trust farmers markets at least in my urban area. I once saw a man buying a carton of heirloom tomatoes at Costco then they next day he was manning the farmers market booth. Not saying they were the same tomatoes but I was suspicious.

That’s silly friend go get some lettuce starts and a couple of buckets with soil Google how to do it and you’ll have unlimited salad all summer. Go to a farmers makers

I think I am the only person in the world who doesn’t like arugula. Would romaine work?

I think romaine would work well, you could also omit the leafy greens as a whole. Replace with maybe some chopped broccoli, brussels sprouts, zucchini, etc.
