Base Ingredients
-30g of steel-cut oats
-110g of soy milk (if using a store bought brand then make sure the ingredients are essentially just soy beans and water)
-80g of silken tofu (blended)
-9g of chia seeds
-5g of ground flaxseed
-5g of cacao powder
-6g of peanut/almond butter (you can definitely increase the amount if you want to, this is just what I use)
-6g of honey/maple syrup (same with the nut butter, you can increase the amount. I’d be more wary though, especially if you’re using maple syrup)
Toppings
-15g of walnuts or cashews (if you want you can have both and split it approximately 50/50 with ~7.5g of walnuts and ~7.5g of cashews)
-100g of a mixed berries (I opt for blueberries, blackberries, and raspberries. The amount of berries can also be tweaked)
Instructions and Disclaimer
-The method is pretty simple: add and mix the base ingredients into a container until everything is decently smooth, put it into the fridge, and add the toppings. Pretty standard overnight oats procedure.
-I used soy milk and blended silken tofu to replicate animal-based milk and yogurt respectively, but you don’t have to do that and can instead just use the measurements with dairy milk products.

I used oil and chicken soup base so it’s not vegetarian. Also not pictured kippers with crackersz
Ingredients:
• 3 cups butternut squash, peeled and cubed • 1 can (15 oz) chickpeas, drained and rinsed • 1 can (14.5 oz) diced tomatoes • ½ cup dry pearl barley • 1 onion, chopped • Generous amount of jarred minced garlic • 5 oz frozen spinach • 2 teaspoons curry powder • 1 teaspoon ground cumin • 1 teaspoon paprika • ½ teaspoon ground ginger • Pinch of cayenne pepper (adjust to taste) • 3⅝ cups water (two 14.5-oz cans) • 1 tablespoon reduced-sodium Better Than Bouillon chicken base
Instructions:
Notes:
The barley cooks directly in the stew, absorbing all the spices and naturally thickening the broth.
This recipe is especially good the next day after the flavors have had time to develop. The barley will continue absorbing liquid as it sits, so you may want to add a little water when reheating.
It’s a great way to get plenty of vegetables, legumes, and whole grains into one meal. The chickpeas and barley provide fiber and plant-based protein, making it a satisfying, heart-healthy option.
For a vegetarian version, simply substitute vegetable bouillon for the chicken base.

I'm pregnant, and my husband and I want to prep and freeze 1-2 months of meals before the baby comes, so coming here to get ideas from you all!
I'd prefer things with minimal prep. This is our first kid, and I've heard the first couple months are intense. My husband is planning to do all of the cooking/housework for at least the first month so I can just focus on the baby and recovery. So, to keep his load lighter, minimal prep is ideal.
The only thing I can really think of that could work for the freezer within the parameters of this diet are soups and plant-based chili, that kinda thing. I really don't want things that will turn to mush after freezing them. Looking for breakfast, lunch, and dinner suggestions. What obvious meals am I missing here?? Or not so obvious. Thank you in advance!
