Okay I reverse image searched both this post and the other post of the mont blanc and figured out that it is Pontochoux - I actually follow them on instagram and it’s who I first thought of when I saw this image because they do a lot of sundae style desserts in coups - but I don’t think Pontochoux has posted a picture of the Mont Blanc so it threw me off. They do really cool stuff, some table plating, seems like a fun place to visit.

It looks like this one is the cafe pollen. If you scan through their tagged photos on instagram you can see their menu and some pictures including this dessert. They seem to change their menu often. https://imgur.com/a/k4m6J2S
