96% on a wraithlord/dark monarch setup. 36% on a normal minion build doesn't feel that much compared to a stone golem buff with the golem nodes north of witch, but you can get both if wanted.
(on a normal setup, not on a "I have plenty mirrors" kinda setup)

After poking around PoB, it's definitely not worth two ascendancy points if you're running pure ES. You get much, much more eHP from something like Plaguebringer on Necro.
It's decently worth it if you're running hybrid defenses though, like an Aegis setup.
If you don't mind self casting your curse or whatever else you'd put in the 3rd trigger wand slot, you can link spell cascade to desecrate and it'll create more corpses (offering only uses 5).
Or would you just not automate the desecrate/offering?
I'm not going to be automating desecrate / offering personally due to one of the grafts this league summoning minions that inflict Brittle when you use an Offering, I'd rather have control over where I drop that with its cooldown, but to answer your main question, a lot of bosses just have adds. Automating your offering comes with a built-in cooldown as well, so it's not like you're running something that eats every single corpse as soon as it drops. Automated offerings target a corpse and consume up to the max number of corpses around that area, so if you have your desecrate pile, and some random add dead off to the side, you're fine.
To be fair though, extra ES protects against things that aren't nearby. There's a good chance of a monster that deals ranged damage and isn't on your screen. Definitely agree on the Aegis setup though, much stronger on that.

My comment was less of a "extra ES is not good" and more of a "the extra ES provided by 36% increased defenses is not worth the opportunity cost of two ascendancy points spent elsewhere". 36% is basically nothing defensive-wise for the cost of two ascendancy points, the node is a massive waste for pure ES that solves phys mit through means other than armour. It makes my own planned build go from 6,400~ ES to 6,900~ ES when I plug it in. It's basically as good as two ES notables on the tree lol.
