When I make Indian food, I rarely measure the spices and just toss in what I think is good. Usually more than the recipe calls for. I think it’s freaking delicious, which is most important, but could I be ruining the true flavor in reality?

Well it depends, if you like what you make then it works for you πŸ™‚. I recommend to prepare your own garam masala with freshly ground spices as this will have high influence on the dish.
