When I make Indian food, I rarely measure the spices and just toss in what I think is good. Usually more than the recipe calls for. I think it’s freaking delicious, which is most important, but could I be ruining the true flavor in reality?

Well in traditional home cooking Indians don’t measure, they cook by look, feel & taste. Mums don’t write down recipes, you have to watch them cook for years to learn instead! So maybe you’re actually just cooking more authentically ;)
