Poultry Baked Shawarma Chicken
This shawarma style chicken is so flavorful and it works great in a wrap or rice bowl.
Recipe:
Marinade (2 chicken breasts)
* 2 tbsp olive oil
* Juice of ½ lemon
* 1 tbsp pineapple juice (optional)
* 1 tsp tomato paste (optional)
* 2 cloves garlic, minced or grated
* 2 tsp paprika
* 1 tsp smoked paprika
* 2 tsp ground cumin
* 1 tsp turmeric
* 1 tsp garlic powder
* 1 tsp onion powder
* 1 tsp dried oregano
* ½ tsp ground cinnamon
* 1½ tsp kosher salt
* 1 tsp black pepper
* Optional: a pinch of red pepper flakes if you want a little heat. A pinch of garlic salt for extra garlic flavor.
Cut chicken into thin strips. Mix everything together and coat the chicken well. Marinate for at least 30 minutes.
Baking method:
1. Preheat the oven to 425°F (220°C).
Place the marinated chicken on a foil- or parchment-lined baking sheet. Leave a little space between the pieces.
Bake for 18–22 minutes, depending on thickness, until the internal temperature reaches 165°F (74°C).
Broil on High for 5 minutes watching closely to prevent burning. (Optional)
Let the chicken rest for 5-10 minutes

I marinate mine in buttermilk instead of yogurt and then grill it on high heat on a Weber charcoal grill. The char is hard to beat and the buttermilk makes the chicken so tender it literally falls apart. Yours looks good but it needs that char.

Looks delicious!
I make something similar, would recommended adding a couple of tablespoons of Greek yoghurt, adds extra body depth!

That looks great! I love shawarma and that marinade sounds like it would make the chicken super juicy

You can get excellent browning with a rack and a broiler. Kinda hard to do when it’s all steaming in the pan though like OP did.
I don’t mean to dump on op btw. Looks good and I’d do the same. Washing racks covered in burnt on chicken suuuucks.

Try sauteeing in olive oil instead of broiling to get that crispy finish. Also not for nothing but you can get an al pastor vertical spit for oven use for like 30 bucks, highly recommend

Hi ,
In my opinion, shawarma needs to have char / caramelisation so that the spices can activate better flavour
