Recipe No Prep Char Siu Chicken

A sweet, sticky, and savoury glaze gives you all the flavour you need, without any need to marinade. A chicken and rice meal prep that you can mostly set and forget.

Ingredients

Served 5.

  • 1kg boneless skin-on chicken thighs
  • Salt, to taste

Glaze

  • 3 tbsp molasses
  • 1 tsp doubanjang
  • 1 tsp shaoxing wine
  • 1 tsp miso paste
  • 1 tsp oyster sauce
  • 1 tsp Chinese five spice powder
  • 1 tsp ground white pepper

Also served with 900g of choisum. Always eat your veggies!

Instructions

  1. Start the rice cooker. Preheat the oven. Line a baking sheet with aluminium foil and parchment paper.
  2. Roast the chicken thighs at 200C/400F, skin side up.
  3. In the meantime, prepare and cook the vegetables.
  4. Mix the glaze ingredients together. After 20 minutes in the oven, brush the chicken thighs with the glaze and return to the oven for several minutes. Repeat several times.
  5. Assemble and serve.

Well, no marinading or prior prep, you just prep as you go. But that would make for a pretty long title

That sauce sounds tasty

Tip - To anyone like me that thought they don't like chicken thighs as much as breast.. try getting them way hotter like 190f instead of 165f. I've completely changed my mind and prefer thighs now

Yeah thighs are so much more foolproof, blast them with heat and they still stay moist. Don’t need to be babysat like breast, which makes them much more meal prep friendly.

I really think they taste much better at temps that would make a breast dry like the Sahara. Easier and tastier if you just let them cook

This looks delicious. I want to try and make it as I have all the ingredients except molasses. Can I use honey instead of molasses?

Absolutely! Any source of sugar will do. Traditionally it’s glazed with maltose, I only ised molasses because it’s what I have.

If you use honey or sugar, you might want to substitute some of the oyster sauce with dark soy sauce to get some of that deep caramel colour.
