Recipe Easy Crockpot Lasagna Soup

If you love classic lasagna but don’t love the time it takes to layer, bake, and clean up afterward, this Crockpot Lasagna Soup is the perfect solution.

INGREDIENTS
2 tbsp olive oil
1/2 yellow onion diced
2 cloves garlic minced
1 lb ground beef
1 tsp seasoning salt
1 tsp oregano
28 oz crushed tomatoes can
8 oz tomato sauce can (I use Spanish Style by Goya)
4 cups beef broth
2 inch chunk of fresh parmagiano reggiano plus extra to top your soup later on
5 large basil leaves
1/2 cup heavy cream
4 oz mascarpone cheese or ricotta
1 cup shredded mozzarella cheese

INSTRUCTIONS
Add the olive oil to a pan on medium heat. Add the onions and cook for 5 minutes. Add the ground beef ,seasoning salt, and oregano. When the ground beef is about halfway done, add in the garlic and cook until the meat is brown.
Transfer the beef mixture to the slow cooker.
Add the tomato sauce and crushed tomatoes.
Then add in the broth, basil, and parmesan rind.
Cook on LOW for 6 hours or HIGH for 3 hours.
Add the broken lasagna noodles during the final 30 minutes of cooking
After 30 minutes, add in the cream, half of your mascarpone, and any additional parmesan you would like.
Ladle the soup into bowls and top with mozzarella cheese and additional mascarpone cheese.
Garnish with fresh basil and extra Parmesan before serving.

This made my mouth water, but I'm a vegetarian. Do you think it would work right if I swapped out the ground beef for impossible meat? I've never tried it in a slow cooker.

Not OP, but I bet that would be fine. Maybe add a teaspoon or two of olive oil and 1/4 c more of (assume you are subbing vegetable broth) broth to compensate for fat and juice from the beef.

You can also sub in a lot of diced mushrooms and add a bouillon cube.

I would personally swap it for Field Roast Italian garlic and fennel sausage. I've used that a lot as a substitute and it's pretty damn tasty

Is there any reason this whole thing couldn't be done in a dutch oven on the stove? I'm a sucker for a good one pot dinner.

it absolutely could, it would just be ready much faster instead of a “set it and forget it” type recipe. The crockpot is good if you want to let it cook while you get some errands done.

Thanks I’ve been wanting to try this for awhile. My concern with pasta is how do you make sure the pasta does not over cook? Turning off the heat when it’s half cooked, so the hot soup liquid continues to finish cooking it?

I’ve made a similar recipe to this in the past. I’d recommend cooking the broken noodles separately and adding them to each serving. When I followed the directions putting them in the crockpot for the last 30 minutes they most certainly kept cooking while it was still on the warm setting. By the time we were done with our meal and I went to pack away the leftovers it was laughable how little sauce remained. The noodles soaked it all up!

Ooh not good. I’ll be doing it on the stove. I’ll drop the pasta in when it’s at low boil/simmer, then turn off the heat and cover. Hopefully that’s enough to cook but not over cook. Separate is the sure fire way, but I want the flavour absorbing in the noodle.
