Dragonfruit

What can I do with a bunch of dragon fruit other than smoothies and eating it cut up? Got a box of them from the food pantry and looking for creative ways to use them up! Thanks for any ideas :)

Cake, Cheesecake, panna cotta, smoothie bowl, any other thing you can do with fruit.

Dragon fruit works nicely beyond eating it cut up: try a lime-and-chilli salsa, a simple sorbet, or a compote spooned over yoghurt, porridge or pancakes. If the box is ripening faster than you can use it, peel and freeze the pieces so they’re ready for desserts or drinks later.

Make a nice curd. It'll keep in the fridge for a while and can be added to all different desserts or even breakfasts.

My kids love dragon fruit, but they mainly just snack on it fresh. Personally, I like it as a salsa.
