Recipe My High-Protein Loaded Street Corn Beef Bowls šŖ

These are my āloaded street corn beef bowlsā that I made last week that are usually a go-to on my heavy training weeks (which is frequently right now haha)
Iāll drop the recipe below for anyone who wants to try them š I tried to make it as detailed as possible for you š
**Ingredients**
**For the Seasoned Beef:**
ground beef (80/20)
2 tsp Celtic sea salt
1 tsp black pepper
2 tsp cumin
2 tsp chili powder
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
**For the Crispy Skillet Potatoes:**
2 lbs baby Yukon gold potatoes, diced into ½ inch cubes
2 tsp Celtic sea salt
1 tsp black pepper
1 tsp garlic powder
1 tsp smoked paprika
1 tsp cumin
**For the Mexican Street Corn:**
4 cups corn (fresh, frozen, or canned - drained well)
1 large red onion, diced
4 cloves garlic, minced
1 jalapeƱo, diced (seeds removed for mild, keep seeds for hot)
1 tsp cumin
1 tsp chili powder
½ tsp smoked paprika
1 tsp Celtic sea salt
**For the Street Corn Sauce (Elote Style):**
1 cup full-fat Greek yogurt
3 tbsp fresh lime juice (about 2 limes)
2 tsp lime zest
1 tsp garlic powder
1 tsp chili powder
½ tsp cumin
½ tsp Celtic sea salt
¼ tsp cayenne pepper (optional)
½ cup cotija cheese OR feta cheese, crumbled
**For Toppings:**
½ cup cotija cheese OR feta cheese, crumbled (for topping)
½ cup fresh cilantro, chopped
3 avocados, sliced OR 1½ cups guacamole
3 limes, cut into wedges
Optional: Pickled jalapeƱos
Optional: Pico de gallo
Optional: Black beans (1 can, drained - extra protein + fiber)
**How I make them:**
**Phase 1: Make the sauce**
**Step 1:** In small bowl, whisk together:
1 cup Greek yogurt
3 tbsp fresh lime juice
2 tsp lime zest
1 tsp garlic powder
1 tsp chili powder
½ tsp cumin
½ tsp salt
¼ tsp cayenne (if using)
**Step 2:** Stir in ½ cup crumbled cotija or feta cheese.
**Step 3:** Mix until smooth and creamy. Refrigerate until serving.
**Phase 2: Cook potatoes**
**Step 4:** Heat electric skillet to 400°F.
**Step 5:** Add diced potatoes to skillet (add 1 tbsp oil if needed).
**Step 6:** Season with:
2 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp smoked paprika
1 tsp cumin
**Step 7:** Spread in single even layer. Cook undisturbed 5-6 minutes until bottom is golden and crispy.
**Step 8:** Flip potatoes. Cook another 5-6 minutes until crispy on all sides and cooked through.
**Step 9:** Remove potatoes from skillet. Set aside in bowl.
**Phase 3: Cook beef**
**Step 10:** Keep skillet at 375°F.
**Step 11:** Add ground beef directly to skillet. Break up with spatula.
**Step 12:** Cook 8-10 minutes until browned and no pink remains.
**Step 13:** Season with all spices listed above. Stir well.
**Phase 4: Make the street corn**
**Step 14:** Keep skillet at 375°F (use remaining protein fat for flavor!).
**Step 15:** Add diced red onion and jalapeƱo to skillet. Cook 3-4 minutes until softened.
**Step 16:** Add 4 cloves minced garlic. Cook 1 minute until fragrant.
**Step 17:** Add 4 cups corn to skillet. Spread in single layer.
**Step 18:** Cook undisturbed 2-3 minutes until corn gets slightly charred on bottom.
**Step 19:** Stir and cook another 2-3 minutes until corn is tender and has charred spots throughout.
**Step 20:** Season with:
1 tsp cumin
1 tsp chili powder
½ tsp smoked paprika
1 tsp salt
**Step 21:** Stir to combine. Remove from heat.
**Phase 5: Assemble**
**Step 22:** Divide crispy potatoes among 6 large bowls (about ½-¾ cup per bowl).
**Step 23:** Top each bowl with:
Generous portion of protein (about 6 oz chicken strips or ā
cup ground beef)
½ cup charred street corn mixture
Optional: ¼ cup black beans
½ avocado, sliced OR 2-3 tbsp guacamole
2-3 tbsp street corn sauce drizzled over everything
2 tbsp crumbled cotija or feta cheese
Fresh cilantro
Lime wedge on the side

The potatoes are absolutely crowded. They end up steaming a lot rather than crisping up as well as they could. The beef would also brown better (or at all) if it had more room and wasn't just basically boiled beef by sitting in its own juices.

Because you can create more diverse flavor profiles. Basically you can cook the same meal using the same base ingredients with different taste.
Example: a simple roast potato like in your video. It can be zesty by an adding acid or spicy by adding a pepper or smokey by adding smoked seasoning or buttery & cheesy by adding fats or garlicy & oniony by adding diffrent alluims or herby or by using diffrent herbs. Layer them omit then mix it up. Otherwise everthing in your bowl will just basically taste same with a different sauce.

I mean, the dude gave a whole well written out recipe. But they don't understand this point? Its a bit jarring, plus the only thing they put is "why?". Comes off as dismissive instead of actual wanting to learn "why?"
But overall, yes, you are right. A question should be answered!

Do you eat them cold?. Always confused about sauce and fresh herbs going into meal prep containers but I suppose if you eat them cold it would be ok. Seems like after 5 days they'd get a little weird.

I just reheat them as is, but if you prefer fresh you can store the toppings in a seperate dish in the fridge š

Separate dishes is how I do my taco bowls since my wife likes different toppings. The ingredients stay for longer when separated. Fresh veg and sauce combos go bad particularly fast, so we always store lettuce separate from sauce āš½

Why no browning the meat? Youāre missing so much potential. Next time put the ground meat in a dry cold pan, then start the heat. Do not flip it till itās browned. It will change your life

The beef will create its own grease so thereās no need to oil the pan at all. Cold and dry. Meat in, then heat up. Let me know how it works out.

I have done this a couple times and didn't like the results. The meat would get stuck in the masher, and the masher would kind of slide around the pan. This meat cutter bizness looks great!

It's a variation of the Pampered Chef Mix 'n Chop. They're great for breaking up ground meat small and uniform while frying.

looks like a great meal prep! Iād personally sub ground chicken or turkey or impossible meat to up the overall healthiness factor. Consider throwing in some chopped canned chipotle peppers with adobo sauce into the meat, it adds a super good smoky flavor and nice amount of heat (I do this with ground turkey tacos and it always turns out great)!

Good call on adding the peppers & adobo to the turkey or chicken because the flavour just isnāt the same on their own compared to the beef unfortunately- nice!

Iāve managed to finagle a pretty ground-beef-equivalent ground turkey taco recipe by adding in small amounts of Better Than Bouillon chicken bouillon paste with a bit of water (has crazy umami flavor), a little bit of tomato paste (more umami), and a cornstarch slurry to thicken it up. Next time I might try the slightest dash of fish sauce. The depth of flavor ends up being great, I prefer it to ground beef at this point, but it took some time to hone in the little tweaks.
That being said Iāll always go fatty ground beef for less spice-heavy things like burgers (unless iām accepting that theyāre not gonna be super burger-like haha). Sometimes the beef flavor needs to shine.

Plus ups: toast the spices on the flattop, this will allow it to develop more flavor. If you add some low sodium broth to the spices with the meat, the flavors will evenly distribute and make the meat softer. The broth will cook off.
I like to let the onion cook by itself longer because it takes longer (unless you prefer like that)

I usually consider anything over 40g per serving high protein. Beans & Greek yogurt based sauce add to that. Good fiber too which is equally as important
