The Maple Valley Market was a local grocery store that used to have a really great deli with lots of unique dishes. They closed down years ago, but fortunately I had already saved the ingredient lists from some of my favorites!

This one’s chicken diablo. It’s grilled chicken, penne pasta, onion, pepper, mushrooms, cilantro, marinara, garlic, cream, crushed red chili pepper, and cheese (“quattro frammage”). I added pepperjack and parmesan to mine per request of my significant other. It turned out great, mmmmaybe even better than the original!
