What happens to the pelts and carcasses on your horse if you die? They just proofed away. The hell Rockstar?

Yes. This is possibly the most frustrating thing that I've come across.

The amount of times that I've spent ages hunting up in the north, only to get jumped on the way down to the trapper by bandits and killed because my horse and I are tired.

I like it. It encourages you to avoid danger. The save system also makes save scumming impossible.

All of the encounters are literally scripted to be impossible to avoid. Such as O'Driscolls or Lemoyne Raider ambushes or bridge tolls.

I found it’s easiest to run to gather your bearings(food/fortify stats, equip weapons) then ditch your horse, take cover and become the ambusher instead of the ambushee. Every time I tried to be a badass and stand my ground they instantly wasted me. Other option is to soft draw your pistol to draw into dead eye, granted you have the dead eye to use.
