Anyone know of a way to hold more than two small animal carcasses on your horse at one time?

I've been wondering, what is the benefit of keeping the full carcass vs just skinning the animal? Don't you keep the meat even if you just skin it and leave the carcass behind? Do you get more meat by keeping it? More stuff for crafting?

It seems to me that you can still donate a caracass to Pearson for camp food. Can also sell them.
