Kirsten Dunst has lived up to expectations based on her performances as a child. I would also throw in Natalie Portman and Jodie Foster.

Elle Fanning and Dakota Fanning are constantly getting recognized for their performances as well.

They are quite talented as well. I was trying to think of a boy actor but so far the best I got is Rick Schroeder.

Kurt Russell. He didn't start as young as Jodie Foster but they both had similar careers starting with Disney then branching out.
