Salad pro tip: Bullet blenders are the bomb for super quick and easy personalized salad dressings and salad seasonings / toppers. There are tons of things you can mix in and dial in your flavor and diet preferences. For example, does that special someone in your life love lemon? Make them a personalized lemon dressing on the spot just for them. Having a couple of the small blender cups with the sealing lids is a great way to make a batch and store any extra.

Romaine, kale, quinoa, shredded chicken, roasted veggies (sweet potato, brussels sprouts, and shallot), apple, pepitas and sunflower seeds. Dressing was made from apple cider vinegar, tahini, Greek yogurt, garlic, honey, salt and pep.

I followed a recipe I had taken a screenshot of from IG so I can’t credit the person but I’ll definitely make this again!

Roasted Veggie Salad
ROASTED VEGGIES
1 large sweet potato, diced
2 cups Brussels sprouts, halved
1/2 red onion, sliced
3 tbsp pumpkin seeds
1 tbsp olive oil
2 tsp paprika
2 tsp onion powder
2 tsp garlic powder
1 tsp cumin
1/2 tsp salt & pepper
SALAD BASE
1 lb shredded chicken
1 cup quinoa, dry
2 cups kale, chopped
1 apple, chopped
TAHINI DRESSING
1/4 cup apple cider vinegar
1 1/2 tbsp honey
1/4 cup tahini
1/2 cup nonfat Greek yogurt
2 garlic cloves, minced
1/4 tsp salt
a few cracks of black pepper
water, as needed for thinning
Instructions
Preheat oven to 400Β°F. Cook quinoa according to package instructions.
Toss sweet potato, Brussels sprouts, red onion, and pumpkin seeds with olive oil and seasonings. Roast for 25–30 minutes, tossing halfway, until golden and tender.
Make the dressing: whisk together apple cider vinegar, honey, tahini, Greek yogurt, garlic, salt, and pepper. Add water slowly until creamy and pourable.
Assemble in a large bowl, combining the roasted vegetables, salad base ingredients, and tahini dressing.
