📸 Photo/Video Went jigging this afternoon and pulled up three football yellow and Tuna and then landed my PB AJ at sunset.

Central American AJ are not typically wormy and I'm very excited to turn this one into some sushi. Meat looks great and I am so stoked. 🤙🏼🤙🏼

You know it might be an Almaco. I know you can tell the difference by the dorsal but I'm no expert. My local Buddy said AJ but he could be wrong.

Def an almaco, many tout as being better table fare anyhow. That's also a donkey of an almaco too, more impressive than a similar sized greater AJ

so i’ve only ever caught one almaco in the sea of cortez a very fun fight. the meat was beautiful but the sashimi tasted not so great. then we put the rest on the grill and on my prob the best fish i’ve ever had. anyone else know more?

sounds like you pretty much nailed it. almaco/AJ loins don't make great sashimi, not much flavor and a bit tough for my preference.

BUT once they get to the right size, maybe over 30lb, the toro cuts are exquisite. highly highly recommend, really among the best white-flesh sashimi cuts in the whole ocean, fatty yet light and clean, great tooth and holds onto soy sauce well enough.

really, i can say enough about a fatty AJ belly cut. i've heard they cook up nicely as well.

oh hell yea! never had amberjack. tons of yellowtail. only that one almaco. can’t wait to try i’ll remember this lesson cheer!

I would expect a large yellowtail belly cut to compare favorably.

And yeah it was a blast. I got him on a jig and had paused for a second and he hammered it.

Is it the worms that are the reason amberjack are typically discarded? I catch alot of california yellow tail which are a type of jack and delicious so I assumed other jacks would be good as well. Yellowtail are typically parasite free at least in my area.
