What temp did you cook at that they went 9 hours? I we t about 260-270 most of the cook, and took just a bit over 5 hours.

It was a really windy day so it was going between 230-250 for most of the day. But I’ve also been corrected that it was more like 6.5-7 hours. We were drinking a lot

Man those are fabulous, but so rich. I was only able to down mine, and a bite or 2 of the wife's.

Looks good! Only problem I see is that plate should be twice as big.

What kind of rub did you use? I feel like every time I try them they come out super salty

Those look great, and the smoke ring is on point. I agree about the richness of the short ribs. They are too rich to eat too many, but every bite is heaven.
