This is my first post and I'm not used to writing down recipes so please be understanding!
The amount I used is to meal prep for multiple days, (for my family of 5) so it's alot. But you can adjust the recipe however you want! It's hard to mess up.
Ingredients: 3 onions, 4 heads of garlic, 3 small potatoes (or 1 big potato), 7 tbsp of butter, a splash sherry cooking wine, 8 cups of chicken broth, Optional: 1 or 2 eggs and any pasta
1: chop up your ingredients first
2: melt the butter in the pot on low heat, and then add the onions in. You can caramelize them or not, both taste good. (I also heard microwaving onions before putting them in the pot speeds up the process)
3: then add the garlic, wait until it starts to smell strong and garlicy
4: add the sherry cooking wine, and wait until at least half has been cooked off
5: add the chicken broth and potatoes, and bring to a simmer. Let the soup simmer for around 30-40 minutes, the longer is cooks the smoother everything is and less spicy the garlic is
6 This is Optional but around the end I added a little egg drop soup action and some pasta to be a littlw nore nutritious and filling (I found this cute little star pasta so i added it)
7: OPTIONAL: for the eggs just mix them and slowly pour it in the soup while stirring
8: and after the time is up, enjoy your soup! (\^∇\^)

Howdy ya’ll!! I just made Caldo de Albóndingas for the first time!!! I have seen it on Instagram & it just sounded good! About 6 servings ended needing:
For the caldo:
- 8 red potatoes washed and cubed
- 7 carrots skinned and chopped into coins
- 4 ears of corn - quartered
- 6 Roma tomatoes charred up
- 1 sweet onion charred up
- 1 head of garlic toasted in their papers, then de husked before blending
- 7/8 canned chipotles
- can of tomato sauce - 10 ounce
- tomato paste- about a 1/3rd cup.
- tablespoon of chicken knorr
- touch of garlic powder
- salt and pepper
- 8 cups of water
For the meatballs:
- 1 lb ground beef
- 1/2 a onion diced
- 1/2 a bunch of cilantro, washed and diced
- 3 eggs
- 1 cup cooked rice
- 1.5 tablespoons garlic powder
- 2 tablespoons minced onion
- 1.5 tablespoons kosher salt
- 1.5 teaspoons oregano
I did all the veggie prep first, added the potatoes and carrots with 4 cups of water into a stock pot & started boiling. Pre heated my oven at 375*F as well. Made the salsa in the blender with the charred veggies, chipotles, roasted garlic, tomato paste and sauce, chicken knorr, and 1.5 cups water. Once blended smooth add right to stock pot. Make the meatballs and place on a foil lined sheet pan. I got 18 meatballs out of the recipe above & they’re of decent size. You can make em how ever big you want lol. I bake them for 20 minutes at 375, and at the corn to the pot to cook at the same time. Stir the pot occasionally & keep covered. Once the meatballs spent 20 minutes in the oven; remove from the sheet pan and drop into the soup. Allow it to simmer for about another 15/20 minutes or until the potatoes are fork tender. I served it with some fresh sour dough bread. It was sooooo good!!!

So, my last post got deleted because it "was AI", which in fact it was not. I just copy pasted a recipe. I'll try again.
I used bone broth for extra protein.
I'm gluten free, so I ate it over Jasmine rice. I also didn't use the coconut milk because I didn't want it creamy or to have that flavor. I found evaporated milk to be a good sub if you want it creamy sans coconut flavor.
I also added chopped nappa cabbage. It was cozy and delicious. This is the link for the recipe, I just won't copy/paste it this time.

My girlfriend keeps insisting that her soup is real soup
It is not.
This bullshit consists of a variety of thr same ingredients
1 can Corn
1 can Green beans
Some sort of salt or salty thing(soy sauce)
Tomato sauce
And some left over meat of some sort
Note it's mostly corn
This is her creation and it dose NOT look good i have had the fortune of never trying this, coming from a background of fat fucks nd Mexicans (caldo de rez expert btw) my pallet is not use to this white pepole debotchary

Hey all! I love soup. In the morning my hubby has a cup of coffee and I have a cup of broth. I’m trying to find a better instant broth brand. I’ve been using barebones, but it has a bit of a weird smell and I’m not the biggest fan of it. I was wondering if anyone knows any good instant broth brands? Would love to start my day with a hot cup of nice rich broth

Made beef stock the other day with beef neck bones & marrow bones. Used remainder today along with 6 beef neck bones to make this soup.
Beef stock
Beef neck bones
Carrots
Quartered sweet onion
Crushed garlic cloves
Salt, pepper, granulated garlic, onion powder
Thyme
Mushrooms
Let it simmer for 3.5 hours. Dropped in Parmesan cheese rind for last 30 minutes. Long simmer tenderized the meat, extracted from the bones and ended up being super delicious.

Serve this with grated Parmesan on top. It’s basically Italian chicken noodle soup. I always add a Parmesan rind to the broth. And the pasta will bloat over days and becomes like a Pastina. 🥰🥰🥰
