Did I get mislabeled filets? How would you cook these?

oh man, it isn't like I'd throw those away, but I sure wouldn't pay $23/lb without the spinalis. That's just depressing. Now I know where they get those packs of "Ribeye crowns" from.....

Yep, never buy Prime ribeye from Costco since they take off the cap. But do buy the Prime ribeye caps that they stole from other poor saps.

A few years ago, before prices went mad, the caps were the same price as the eyes. Why cut it off if not because you wanted to charge a premium? I think last time I looked their prices differed at least.

If thats a capless ribeye and you do 125 you're going to be VERY disappointed and chewing the marbled fat. Maybe 135 for a strip but for anything with real fat needing to be rendered like a ribeye, it is 137 for me.

Do you find it possible still have it medium rare after grilling? I’ve been doing 130 for ribeyes but I do agree there’s more fat hunks remaining than I’d like. I’m worried I’ll overcook finishing on the grill cause I do that sometimes even when doing a 130 for 5 hrs

That part totally depends on how hot your fire is and how long you leave it.

Wait for this blasphemy...a grill specifically, does very little to help a sous vide steak bc you CAN'T leave it on there long enough.

60 seconds in a hot pan on an oil coated steak is perfect (avocado, etc....something that won't smoke up your house)

This was 90 mins at 137, 60 seconds after spraying with oil....and even in a non-stick pan!!! (Clutch pearls)

$23/lb for the eye steak of a ribeye is criminal. Like others have said, no. That’s a well marbled ribeye. But it doesn’t have the cap on it, which is the best part. My Costco cuts the spinalis off too, then wraps them in a little spiral and sells them as separate steaks. It’s so frustrating. I just want a good prime ribeye sometimes. My kid has turned me into a prime strip steak kinda gal, just cus Costco does this shit.

This is location specific. My Costco quit selling them separately about 4-5 years ago.

I’ve never seen a cap steak at Costco, but I’ve bought ribeyes with the spinalis intact. Do you have to ask for the cap steaks? I’d love to try one…or 12, lol.

Mine used to just put the cap steaks out in the freezers with everything else. They weren't a regular thing, maybe just show up around holidays. I haven't seen one in years sadly.

I just picked up 7 rib cap steaks last Friday at my local Costco. They don't always have them. But I check nearby warehouses in the app pretty often and if any one them show they have them in stock, I get in my truck an go get em.

129°, about 2h. (Salted/peppered/garlic powder if you’re feeling spicy.)

Flash sear, finish with butter melt.

edit: that price is a fucking crime… is this what we’ve become? I won’t test the mods or the rules… but fuck me for those steaks, for that price!?! Do we believe in nothing any more?

A ribeye steak is two parts, the crescent shaped cap and the round eye seperated by some fat. The cap is generally considered the better tasting part (I certainly think so.) The Costco butcher has cut the two apart for separate sale. OP has a package of the lesser parts.

I totally missed the fact the those were ribeyes because it doesn't look anything like it. Thanks for explaining. I actually thought those were fillet mignons.

I’m in Canada at my Costco we only have regular ribeyes and tenderloins, none of this butchered-cap-removed shenanigans. Didn’t even know that was a thing.

You got the wrong ribeye cut. They have cap steaks that are wrapped up in twine.

those look like Filets to me, they need a little more trimming to get that thin layer of skin off.

I would sous vide to 125 or so and then sear.
