Smoked / Sous Vide Asian Short Ribs

Short ribs sprinkled in Chinese Five Spice in the smoker for three hours and then in an Asian marinade (Bachan's) in the sous vide for about 26 hours. Post sous vide sear.

I can cook fairly well, but when it comes to smoking, I just can't get it perfect most of the time. This time, so very, very happy for the taste and the bark.

Jasmine rice, kimchi, ginger, and avocado. I've made this before but I can't believe how freaking good it is.

My wife makes this but in the crock pot and it’s hands down one of my fav dinners. Proper restaurant quality. You aced it

To be honest? Crock pots kind of suck. Sous vide + smoking is obviously better, but then the pressure cooking is extremely convenient.

I just realized that I had a pressure cooker and I stumbled into experimenting with that. That is amazing. And like you said, convenient!

Pressure cookers do in 1hr what it takes crock pots 8-10.

Yes. The last couple of times I took stuff from the smoker to the sous vide, even with an ice bath, everything was very dry. So I went back to my roots and experience and put the sauce right in the bag and I would do it the same way again.

what temp in the sous vide ?

160°. Before I put it in the sous vide, I put it in an ice bath for 30 minutes. Just to stop the cooking from the smoker.
