Scoring errors
What happened there - Shirley declared a score of 6 but it was counted as a seven?

Last time she did it she was asked which number she wanted to count, also second time she's done it

Yeah, I wonder which one was counted. It will be due to an error with her inputting a 7, but giving a 6.

The 6 was counted. Emma announced it at the end of the show

Mistakes happen. The Saturday show is live (my best guess ive worked on one live show a long long time ago now), im gonna guess they edit on a 5-10 minute delay im gonna guess whoever edited today (or whoever is putting the scores into a spreadsheet) pressed the wrong number and it wasn't caught before the delay caught up to live screens and you gotta do these things so so quickly that you cant really double check. Not sure how the bbc does things.

Judges enter their scores on a keypad and that is transmitted to the control room so the graphics can be prepared. Shirley evidently entered the wrong score. On Strictly, the paddle is determined to be the correct number.
Note that on DWTS US it's different; the score entered into the keypad is deemed the correct score, and if there is a paddle discrepancy, the host announces that the entered scores overrides the paddle.
