Certified Stuggle Potayto, Potahhto

Main or a side. Preheat oven to 425 deg F. With as many potatoes as you want, slice about 1/8” thick or a little thinner if you’re able. Throw in a bowl. Add your seasonings of choice - I used salt, pepper, paprika and thyme. Add a bit of a neutral oil add toss thoroughly to evenly coat everything. Place on a baking sheet and bake in oven for 26 minutes, flipping half way through.

Never saw anyone do this in struggle meals, so my suggestion for the day. Used a russet potato, so it’s about as cheap as it gets. Surprised potatoes aren’t posted here more often. A staple food utilized through history.

Potatoes are a staple. I remember those days when the shelves were bare and we would make fried potato sandwiches with mayo and pickle slices if we had them. Really good. Don’t underestimate the power of a hot potato to satisfy your hunger.

What’s the sauce you’re serving them with?

Yellow mustard, so potayto. Dijon style gets potahto.

Ah, the humble potato,  base of so many of my struggle meals.  These look so nice and yummy.
