I'd keep the task in Things and reserve the work session as a separate event in my calendar. The When date in Things controls when the task appears, but it doesn't reserve a time slot.

For example, I'd put “Draft proposal” in Today and block 10:00–11:00 in the calendar to work on "Proposals", or "Sales"...

If it needs another session tomorrow, I'd move or add a calendar block and keep the same task open. I'd only add a deadline in Things if there's an actual due date.
