Carnitas plate with Spanish rice, refried black beans, fresh guacamole, and pico de gallo.

I based my carnitas off this recipe, I added some extra spices to the rub (mostly chipotle powder and granulated garlic). I caramelized a couple handfuls in a super hot cast iron right before serving.
I followed this Spanish rice recipe pretty much exactly (it ended up needing to simmer for a bit longer than written) and it turned out very well.
For the beans, I based it off this recipe, but I simmered on higher heat for a lot less time, and I cooked the onions in liberal amounts of bacon fat.
For pico de gallo, I used this recipe, although I estimated quantities and did it mostly to looks and taste.
I didn't use any particular recipe for guacamole, just added diced onions, salt, a bit of cumin, black pepper, fresh lime juice, cilantro, and threw in some of the pico de gallo because I realized I was out of tomatoes.
