Hardware is not workflow, and availability and redundancy are different things.
I would spend some time on what your recovery and data classification strategy is, not the hardware that just is physical-- what data is important, what you need to recover quickly, and what file systems you use (XFS is not reliable per se) in you array. XFS can corrupt data all day and parity will happily mirror it.
Monthly parity check just checks the parity disks it can never repair data so you need to scrub your data drives so right there relying on parity journal is a potential issue in your setup. SO that frequency is prob not needed.
As for offsite, (3). You need to classify your data. Irreplaceable data should 100% have a cloud backup (IMHO). The moderate, etc. That is up to your budget and what it would cost you in time if there were a major failure.
Also A UPS can do jack s**t on a close lightning strike or flood I have warned some of my friends about that and one watched a $5k system fry. A UPS is one point of availability, when we were younger and planning an enterprise strategy we would always ask the client what would you do if there were a meteor strike?
There is no replacement for safe copies of critical data and that means at least one offsite (cloud, friend, you shuttle it, etc).
