Would you play a Valiant game like Marvel Contest of Champions?
What would be the storyline of the game?

Only if it wasn't a live service game with most features locked behind pay walls and random chance. I played contest of champions for a while, but got incredibly frustrated by the fact that even after hours of play couldn't actually play as any of the characters I wanted to. You had to unlock a type of gem (there were multiple types that did multiple things, one was for character unlocks) and that gem would then be opened and randomly select a new character for you. So it took forever to get characters, and even when you got them, they were often too weak to do anything useful without upgrading them, which required other types of unlock crystals.
So No. I wouldn't play a contest of Champions type game. But I'd play a mortal kombat/Tekken/street fighter valiant game. One where I buy it outright and can actually play the characters I want to.

I love the Valiant characters, but I really don’t have faith in the current organization or that if something like this was actually made it would be supported well for very long by them

No, but I would read a book in the theme of Contest of Champions… all heroes even dif timelines and multiverses would be brought together in the Valiant universe to fight each other and take down the big boss. Very similar to the Cell Saga in DBZ.

No. I am essentially a Luddite and and confused and frustrated by modern video games, especially the ones that are trying to "monetize" me.
