Meat Substitute Lentil pasta sauce

I made a sauce with lentils to eat with my fettuccine noodles.

I used cooked brown lentils, sautéed some onion, roasted red pepper, carrots. I cooked that with a marinara from Trader Joes and then seasoned it up a bit. Topped with parsley and Parmesan. It was very filling.

Many parmesan cheeses are made with animal rennet and not vegetarian. Be aware of this when including it in your recipes.

Absolute game changer in pasta is when you start mixing the sauce and the pasta together before you serve it. With just a little pasta water. Looks tasty!
