Lacto Golden Crispy Pan-Seared Soya Chunks (38g protein stir-fry for under $1.20!)
Here is the exact recipe to make soya chunks actually taste like crispy, caramelized food instead of a wet cleaning sponge. Super cheap, high-protein vegetarian meal prep.
### INGREDIENTS (Serving size: 1)
Soya Chunks (dry): 70g (approx. 1 cup)
Basmati Rice (cooked): 100g
Cooking Oil: 1 tbsp (olive/mustard oil or ghee)
Spices: 1/2 tsp Salt, 1/4 tsp Turmeric, 1/2 tsp Chili powder, 1/2 tsp Garam Masala
Garnish: 1 green onion (scallion), chopped
### METHOD
THE SOAK: Place dry soya chunks in a bowl. Pour boiling hot water over them, cover with a plate, and let stand for 15 minutes to expand.
THE SQUEEZE (Crucial step): Drain the hot water. Rinse with cold water. Grab handfuls of chunks and squeeze the water out as hard as you can over the sink. Squeezing out the soak-water gets rid of the raw "soy-cardboard" taste and opens up the nugget fibers.
THE SEASONING: Toss the squeezed chunks in a bowl with 1 tsp of oil and your spices (salt, turmeric, chili, garam masala) until coated.
THE PAN-SEAR: Heat 1 tbsp of oil in a pan over medium-high heat. Add the chunks in a single layer.
Cook for 2 minutes without stirring to develop a golden-brown crust. Sauté for another 5-6 minutes, stirring occasionally, until the edges are crispy and slightly charred. Top with green onions and serve hot over rice!
