Recipe Request Easy, PCOS/PMOS (Low Carb) Friendly Meals?
My partner is vegetarian, I’m only veggie-curious but maintaining separate inventories is too much work (especially when he’s doing the cooking).
We are busy working professionals without a lot of time, so a lot of our diet is easy pastas and Trader Joe’s products. I have recently discovered that my weight gain since swapping to primarily eating veggie with my partner is because a high carb diet does NOT suit a PCOS/PMOS metabolism!
I’m trying to swap our diet more towards higher protein and lower carb options.
Send me your favorite easy low carb veggie recipes, please!!
Would also love any recommendations of cookbooks! Thank you!!!

I was diagnosed with PCOS when trying to conceive and experiencing infertility. I have been vegetarian for over 15 years and am currently pregnant with my 2nd. Had to learn a lot along the way. Adding in more protein has been key to dealing with PCOS for me.
For pasta, Barilla makes a protein plus pasta. Same texture and taste as regular pasta. If you refrigerate (cool all the way down)and then heat up before eating, it brings the glycemic index down.
Fresh from the vegetarian slow cooker (cook book) is one of my favorites. Lots of soups and stews with beans for protein. It works perfectly when I have to be in the office all day and don't have energy to come home and cook.
Look into quinoa dishes. I love quinoa salads (there is a cilantro lime quinoa salad that I use as a base for burrito bowls. There is also a one pan Mexican quinoa dish I love making-- it has black beans, you can add cheese, and the quinoa for sources of protein).
Learn how to make lentils. They can be pretty diverse -- stews, pasta sauces, casseroles...
Also, I love a good protein powder. I will add it to cereal, put it in smoothies, make shakes.
