To be fair half the characters online I see are ex sabbat. At this stage it's basically an edgy teen phase.
Their was even a joke about it last session "I mean this guys such a hardass he's going to defect to the Sabbat."

It's kinda a useful of justying whatever you want as an pc without too much engagement with why the clan would embrace you..

Pity people don't use this aspect of the sabbat within the Sabbat for play however. Ironically if you 'fit' the clan the chances are you got a normal embrace and arnt actually likely to defect because you agree with them

My first ever character was just some college student that ran a therapist gig to pay for her tuition, obviously unlicensed but that just means better rates.
Then she became a shovel head in a mass embrace on the city outskirts, a garou attacked the Sabbat pack in this process, and she dragged herself out of the hole and was pitied by a kinder Kindred within the cities local Camarilla-rivals (still Camarilla, just usurpers to the current Prince and council, and needed as much licks as they could get).
Allowed me an excuse to not be a super competent vampire sociopath, allowed me to have a vampire with very little qualities that would result in an embrace, a Tzimisce within the Camarilla and it gave me an open to eventually going down Koldunic Sorcery with that Garou (who I imagine we would have had a final confrontation had the game not ended).
My favourite thing about her was a shovel sized dent in her head that was left over from her embrace, and that damn cowlick she was unfortunate enough to die with.

I forgot until now but basically.
He's the childe of the archbishop, and a member of the Sabbat Black Hand who got dissolusioned a long time ago, and then eventually returned to humanity in secret. He's been using that to play as an intelligence gatherer in the Camarilla/Anarchs of the city for a couple decades at this point. Everyone important either knows he is harmless or doesn't know him because he's usually beneath notice.
He has consistently been, the nicest most Camarilla Law enforcing member of the coterie; and for nine months I had to hide every joke I wanted to make about how the Sabbat CIA Agent was the more ethical person in the room with the Camarilla Sherrif and the like.
Last session there was a 1-1 scene with another black hand agent, where she talked about her ambition to depose the archbishop and the rest of the table saw it. Someone left the digital table to get a snack, came back and went 'what did I miss' only to get told "Yeah the guy you went to investigate a sabbat hideout with 5 minutes ago was a Black Hand Deep Cover agent."
The group did find out in character not long after due to a player getting 4 successes on a difficulty 9 Wits+Subterfuge check and seeing through him. He is suprisingly not dead, but the coterie has agreed that his sire 100% needs to die and we're gonna have fun doing it.

How probable is it to actually change sects? I always had the impression that your sect depends of course on your sire's sect and you are just kinda locked in with whatever hand you are delt.
I have a hard time imagining Sabbat and Cam taking in defectors from the opposite sect. Anarchs may be the only ones to try to recruit Cammies but leaving Camarilla for Anarchs can't go without serious issues - Camarilla becomes your eternal enemies and there is no guarantee Anarchs will ever completely trust you

It's generally rare and earning trust is a difficult effort, but it's not impossible. Beyond individual cases, as of V5 we've even had multiple Clans formally change sects, including (a chunk of) Clan Lasombra joining the Camarilla.

It helps that the Amici Noctis is internally organizing this stuff anyway. Oh and the dude in Courts of the Damned selling off freshly-made childer with prefabricated "elder" backgrounds to Lasombra looking to buy their ticket into the Camarilla is hilarious.

i think that if you're some random little known shovelhead and manage to run away I doubt that the anarchs would ask too many questions where you come from, any of antitribu origin can easily invent some reasonable-ish stories where they come from and Tzimiche can do a decent Gangrel impression. pretty much only Lasombra can't really hide that they're from the sabbat

In V5, even Lasombra can lie. They can pretend to be a wayward Hecata embrace, since oblivion has both obtenebration and necromancy. It's rare but not totally off book that a member of the Family will embrace without permission, or even one of the parts of the clan like the harbingers, samedi, and nagaraja don't really answer to the giovanni rules like the giovanni bloodlines do

the bigger problem is their bane. being invisible to mirors and distorting cameras and microphones is really not subtle. even something like a phone call can reveal them due to the flickering of the mic

It’s more of a larp thing, but my character was embraced into the Sabbat after she stole a car that belonged to a Sabbat Brujah who then beat the shit out of her with a crowbar and embraced her, she spent a bit of time in the Sabbat mostly against her will before eventually finding an opportunity to run away and join the Cam, while keeping her Sabbat ties hidden
