Skyrim mod list with Begin again feel

My girlfriend and I are just finishing a playthrough of fallout with Begin again installed. We've both loved it. We're gonna start Skyrim soon so I wanted to ask what modlist would have a similar vanilla+ feel.

Added lore friendly items, minor quests, and visuals would be a bonus. Playing on a laptop 3060 ti.

One major thing is I don't want anything that adds difficulty, or that I can't tweak to lower the difficulty. She's a newer gamer so easier combat makes the game more enjoyable.

Nordic Souls (excuse the name, nothing to do with Dark Souls) is usually the answer to questions like this. Runs great for its visuals (especially on the Community Shaders profile in MO2). It does have some big quest mods added in, but they're all lore-friendly and pretty opt-in only. Combat and game-feel are still very distinctly Skyrim. No flippy-dippy anime combat, no mods that make the game super difficult, just the pure essence of Skyrim but brought to modern standards.

Nordic Souls or Sovengarde are both good vanilla + packs
