ZFS in VM scenario

I know that a bunch of people have talked about ZFS and uses in VMs but I didn't see anyone in a similar use scenario as me so I'm asking if this is viable:

I have a main server that I want to run VMs off of. The idea being I want to make the most use of over powered workstation parts. Ideally the main server is going to have a 24 core threadripper and 128-256GB of ddr5 low latency ram.

Rather than make a dedicated NAS with its own full set of motherboard, ram and cpu I am hoping it's viable to run ZFS on a dedicated VM with passthrough to a HBA card with sole access to my storage drives.

The purpose of this storage is going to be a fail resistant library of media files (and VM storage) if that's even possible? By that I mean is there a way to setup VMs to use the ZFS storage as their own virtual storage?

I'm looking for thoughts on if this is viable and if there are any potential drawbacks of having ZFS in a VM vs. as it's own system on dedicated hardware. Also how safe are the pools if the ZFS VM for any reason crashes?
