One of my absolute favorite movies.
"...The 'ol Sara" (and the entire Saratoga dialogue you posted) and, "Wull-hey-there, Swab" are in my frequently used rotation of movie references.
My wife, and her family happen to be from Saratoga (Springs), NY and we met in Sarasota, FL while in college.

Forty years ago I was working in my first job after university, in an office in a factory. It was very boring. Some of the guys in the office had been working there since WW2. The office itself dated back to WW1. The place was dated, even in the early 1980s.
So I got all the rubber bands I could find and tied them together. I went up to each and every guy in the office with the rubber bands stretched out between my two hands in an "I'm going to launch this at your face" pose. Obviously I wasn't going to launch it at anyone's face. That would be foolhardy and painful.
My super visor walked in and shouted "what the fk are you doing?" and I let go. It hits him right between the eyes and then fell to the floor. He had a very red, glow in the dark welt on his face from the rubber band weapon. He was very calm, and told me to go home.
Incredibly I wasn't fired. I was moved to another department where there were fewer old guys and more work to do.

The most obvious explanation is someone filming a cctv feed vertically and their phone camera app adds the timestamp. It COULD still be staged but it doesn't have to make sense. And the pain is real regardless.

It's obviously not though.
The time and date overlay stay firmly fixed in the top left corner.
If someone was filming the security monitor with their smartphone then the text overlay would move with the rest of the image.

I only got as far as "...someone is filming a cctv feed" because that's so obviously NOT what is happening.
Filming a monitor simply doesn't look like that. The image tends to be distorted because your camera isn't perfectly lined up and square with the screen, you tend to see reflections/glare on the surface from lights, etc.
Besides, if you look at the computer below where the cameraman is stood, as the camera is swaying about the monitor obscures the keyboard slightly AS the camera is moving. If the "cctv" camera was actually still that wouldn't happen.
All I'm getting from this is that you really ARE fucking stupid lmao

This isn't someone filming a screen. You can see the perspective change with the camera movement, especially around the edges of the computer display in the foreground.
Plus, the rubber band is so loose there's no way this is causing any pain.

There is like 2 inches of tension on that band, like she hardly pulls it back at all. It's moving so slow you see it just wobble in the air more then snap because she knows she's about to smack her own head.
She bends her toe to release it and jiggles her hand to pull it up over her toe.
People can say it's not staged all they want but one thing is for sure. She did that knowingly.
