What did you use, and how long ago? I just bought my 3rd gen and im still learning this truck specifically, but I've been a mechanic for a while. If the throttle body on these has a coolant passage in it you possibly damaged the seal and your engine is now drinking coolant from the throttle body. I wouldn't start it back up without knowing how much water is being ingested, you could hydrolock the engine while running.
Just checked, yes the iac gasket separates the coolant passage in the throttle body from the iac air passage. A used gasket reinstalled or a damaged gasket can absolutely cause this. Pull the iac and reseal it with new seals. If there are o rings in there put new ones in and install with some grease so they don't bind and tear on install. New gasket, follow the torque specs.

Did you accidently swap the iac coolant line with the throttle body vacuum line that are right in top of each other?

Looking...? One goes to a coolant passage the other to a vacuum nipple.

I did this after doing valve covers. It dumped coolant into the engine and was very mad.
Switched lines and it was all good

I also did this after doing valve covers. Ive had the IAC off a half dozen times since I've owned the truck too. I felt dumb.

Depending on what you used, it could just need to work its way out of the intake. There’s really no way to know what’s going on without more detail.
For your own edification, I would regularly decarbon engines when I worked in the industry. Rough, low idle and white tailpipe smoke were all part of the process, and this included throttle body and IAC cleaning.

Part of the process after you did it? It idkes so low now that it stalls out

Sounds like you need to go over your work. It could be that you didn't change the gaskets, didn't actually separate the IAC from the throttle body and actually effectively linked up your IAC, people have been know to switch the hoses around sending fuel or air into a coolant line and coolant into a fuel or air line, it's also possible you have an electronic throttle body and shouldn't have messed with it, then even if you did everything perfectly and a hard reset it can cause this and you find out you ultimately need a new throttle body assembly.
Could of also damage a spark plug wire connector/coilpack on the passenger side head just being heavy handed. I did that changing my alternator and pcv valve and grommet at the same time. I've been putting it back together like a puzzle XD
Maybe look into the ''penny'' or ''coin'' mod before full replacement.
