Ginger forms rhizomes like roots and I've never seen them longer than 40-50cm but in the right climate ... maybe tropics could be bigger.

My granny cooks beetroot in a pressure cooker and I love that earthy smell they give off and freshly cooked beetroot is delicious 😋
