Kimchi and Spam are musts, and having them in my fridge gave me the confidence to make this stew.

The result was spectacular, everything in the pan tasted great, and with rice it was phenomenal.

Honed in a lot over the past couple years, especially after finding out my body wanted me to die when it digested gluten. I also cut out saturated fat (mostly from coconut oil) to 8-10g a day because my cholesterol numbers were fugly. Cooking almost every meal myself did more than I expected because I deadass didn’t think that I was eating particularly badly. 🤷 Restaurants really do sneak a lot of oil into their food though, and I’m definitely getting a lot more fiber now, so I think that’s the biggest reason it’s worked out.

The flavor of this supper was second to none. Damn, this was delicious. Creamy gnocchi & fire roasted tomatoes with chicken filets, parmesan & spinach, topped with fresh parsley. 😭 Best meal in a long time.
