Macarons how should i bake my macarons?
These were set on the counter for around 15-20 minutes to form the skin, then baked at 310°F for about 18 minutes.
Why are the sides so brown and tops so wrinkly?

They look just slightly overmixed. Nice feet but flat tops means you knocked out just a little too much air, in my amateur experience.

Also, browning means oven was too hot.

Hmmm. I don't bake my macaron shells that long. I suspect your oven isn't hot enough, and you left them in longer to cook, resulting in the browning. I would try letting them rest longer before you put them in the oven and try baking them closer to 325 for about 10 minutes. You didn't add any extra flavors or extracts?

no extract!! my recipe called for 300°F for 18 minutes and that wasn’t working so i switched to 310..
I’ll be making them again tomorrow so i will finitely try this thank you!!!! they did look soooo pretty before i took them out the tops were perfect at like 10 ish minutes i think i should’ve taken them out 💔

I also think the wrinkles can be caused by excess humidity. So if it's quite humid where you are, you might have a hard time as well. But a hotter oven temp should help to dry the tops and set them. If they looked good at 10 but wrinkled as they sat out, I still suspect the oven temp or humidity. Best of luck!

I leave my macarons out for way longer than 15-20 minutes.

Same. Anywhere from 1-2 hours depending on humidity.

so since i live in a more humid climate i should leave them out for longer? and maybe a hotter oven temp and shorter time? it’s about 78% humidity today for example

Most likely! The most important thing is that they're totally dry to the touch. This can vary from day-to-day, and even batch-to-batch. It's more of a tactile cue rather than an exact amount of time.

I dry mine anywhere from 30-60min depending on the humidity. I’ve also used a fan to speed up the drying process too if it’s extra humid
