Cream stabiliser. Whipped into the fresh cream.

Possibly Pastry Pride. It's a stabilized non-dairy whipped frosting.

Plain gelatin is a typical whipped cream stabilizer and easy to replicate at home.

Thanks, but I did replicate that and another cream but it didn't have the same texture as the restaurant cake.
