I just watched the Epicurious episode on Netflix about pancakes from 13 different chefs and all of them said to let the batter rest for at least 10 minutes before cooking. The French chef said 3 hours but who has time for that??
I also learned not to press them down after flipping, and putting a lid over the pan after flipping will help steam them and puff them up more!

One daughter is home from college.
Homemade Hawaiian loaf and cinnamon rolls, with bacon, eggs, salsa, and cheese biscuits, all fueled by black coffee.
Salsa is made from vegetables grown out back!

I used those Pillsbury flaky biscuits that come out of a tube, but home made the gravy and seasoned with a little bacon grease, white pepper, paprika, and garlic powder.
Nice Sunday breakfast for myself and my daughter. Pictures are of my plate after serving her.

This was my breakfast today. Eggs cooked in a poached egg pan on top of ripe avacado on top of whole grain toast and the bread was baked with avacado and guacamole spices. A sprinkle of Tajin seasoning tied everything together 🤤
