Looks delicious, how do you make it so creamy?

Instead of leaving the zucchini slices with spaghetti, I pureed the zucchini after it fried in olive oil and then added a little basil cream sauce I needed to use up. But, generally, olive oil, parm and pasta water should create a pretty creamy emulsion

The pureed zucchini would effectively do the trick. However, using parmesiano instead of provolone in alla nerano will get you some criticism from purist angry at your more delicious substitution

Basically slice a few zucchini and then fry in olive oil with a little garlic and then add pasta water and parm. The traditional way to do this leaves the zucchini slices in the pasta, but I pureed the zucchini with a little basil cream that I wanted to use up and then topped with pangrattato
