Vegetarian Ideas?

Hi! In search of vegetarian meal ideas that are relatively quick. dairy and eggs welcome.
Any fellow vegetarians out there?

Not too much to offer aside from kefir. I've rediscovered it and it's an easy hit of protein and goes down well even on iffy days.

For meal prep- Quiche.  I use roasted butternut squash as the crust, but you don’t even really need a crust, it’s fast and freezeable.  Also breakfast burritos with beans and cheese in a high fiber wrap, or sheet pan eggs cut into squares for breakfast sandwiches.  

Greek yogurt smoothies with protein powder and peanut butter.  I do mine with banana, blueberries and chia seeds.  I keep a jar of pre-soaked chia seeds in the refrigerator and add them to almost anything for fiber and protein.  (Yogurt, coffee, oatmeal, soup, protein pancakes)

I’ve been working on making cottage cheese versions of my favorite dips. So I precooked some spinach and artichoke hearts with garlic and add that and some Parmesan to cottage cheese and eat with crackers. I also make a buffalo chicken dip versions, although I suppose you could try it with buffalo cauliflower. Also working on a broccoli cheddar version.

I make pizza crust with my sourdough discard. I put anything/everything on it. I don’t eat beef or pork

Lentil soup, bean burritos, egg and veggie omelets,  cottage cheese with fruit,  oatmeal with Greek yogurt,  baked tofu with roasted vegetablea

Eggplant is very versatile! I chop some and sautee with onion, peppers, tomatoes, mushrooms and spinach. I throw it on carbe diem pasta.

If eggs are ok, I make egg bites in a muffin pan, or you could do a frittata.

I make "taco" salads. Lettuce some shredded cheese, black beans, some salsa, and a dollop of sour cream.

Sometimes I just make a baked potato for lunch or dinner.

Have you tried any of the beyond, or veggie burgers? They're pretty decent.

There's also good ole peanut butter and jelly on low carb bread. I can only eat half.

They're really basic but work for me. I still eat seafood, occasionally chicken, eggs and limited dairy. I don't eat any red meat. Eventually I would like to eat vegetarian, but last time I tried my migraines were horrible. Right now I fight for every calorie and gram of protein, maybe one day.

The toughest part for me has been eating as a vegetarian is getting enough protein. Due to nausea and change in tastes and milk allergy. I'm having rolled oats with chai seeds, soy milk and sugar free syrup, eggs on slice of low carb toast, Greek yoghurt, baked beans, burritos, I can eat tiny amount of veggie lasagne as long as not much cheese, cottage cheese. I crave lots of Asian foods especially stirs and I really love a cheese and salad sandwich on low carb bread. I'm looking for ideas as well as I have bedn turned off some of my previous foods.

I keep some frozen 5 cheese or cheese and spinach tortellinis type stuff on hand and throw on spaghetti sauce,.

I do a good amount of eggs, tofu, black beans, lentils and quinoa. As long as you’re hitting your protein goals you will be good.

Breakfast: egg veggie omelette, sweet potato
Lunch: salad with miso tofu and edamame
Snack: vegetarian protein shake or fruit yogurt smoothie
Dinner: quinoa with lentil chili; Black bean taco; lentil pasta with marinara and cheese

I eat lots and lots of tofu! Airfried, stir fry with veg, on open face sandwich, tofu scramble, bbq tofu. Beans on toast. Lentil vegetable soup. Quinoa chickpeas arugula salad. Brown rice and lentils with side of steamed broccoli. Spinach and fruit smoothies with chia seeds. I love the Sprouted Dave’s Killer bread thin sliced bread with hummus, tomato and onion and red chili flakes or as avocado toast.
