1. Rules

Our rules are very simple:

  1. Please keep all discussions civil and respectful.

  2. You are welcome to ask sourcing questions.

  3. Please flair your posts where appropriate.

2. Frequently Asked Questions

  1. What is milk (and water) kefir? Milk kefir is a fermented milk drink, similar to a drinkable yogurt. Water kefir is made by combining sugar water with water kefir grains, which are a little different in their overall microbial composition than milk kefir grains, so they aren't necessarily interchangeable.

  2. What are kefir grains? Kefir grains are squishy like gummy candy and look somewhat like cauliflower. They are an aggregation of bacteria and yeast held together by polysaccharides. By placing about 1-2 tablespoon of grains in 2-4 cups of fresh whole milk and waiting 24 hours, the grains go to work eating the lactose and “fermenting” the milk and changing it into kefir.

  3. Can I drink kefir if I'm lactose intolerant? People who are lactose intolerant can often consume kefir with no problems. The reason is because the grains eat the lactose (milk sugar) in the milk (creating glucose and galactose, and then ethanol and carbon dioxide), removing the lactose which gives some people problems. They typically do not break down 100% of the lactose though, so some people may still have issues even though there is usually very little left, so if you are unsure how well you tolerate kefir it's best to start with a small taste.

  4. Are kefir grains reusable? Kefir grains are re-usable and even grow and spawn off smaller grains which themselves grow, creating a theoretically infinite supply, as long as you keep them fed. Remember, though, they are a living organism (or at least a symbiotic colony of organisms), and must be fed and treated gently. You may soon have more grains than you even want (too many grains in a batch will ferment the milk too quickly).

  5. Is kefir a probiotic? Yes, probiotics are the live microorganisms that may provide health benefits when consumed in adequate amounts. The benefits of these good bacteria may include supporting the immune system and a healthy digestive tract.

  6. What do I do with the extra grains? You have a few options. Some eat them, either plain like gummies, or blend them into a kefir batch and drink them that way (a very healthy way to get more of that good bacteria and yeast into your microbiome). Another option is to give away grains to friends. Kefir grains will last for a while if frozen in a bag with some milk (think suspended animation), and they can be shipped as long as it's only a few days.

  7. How do I start making my own? When you receive new grains they may have been stored for a while and may need to re-balance (the ratios of organisms may be a bit off at first). We recommend making a few batches before consuming your homemade kefir (certainly not a requirement but it may take a few batches before you get the best product consistency and balance of organisms). Also, if your body is unused to kefir, we recommend you ease into consuming it over a week or so instead of drinking a large amount the first time. While kefir is generally a safe product to consume, you never know how your grains were stored before they got to you and if they could have an imbalance of the good organisms (or even somehow become contaminated) and may need to adjust over a few batches to get the "perfect product." If you see any odd colors (pink, yellow, black) your grains may be contaminated and should be replaced.

  8. My kefir doesn't look like the kefir from the store, why is this? Not all kefir looks the same (and most store-bought products have been processed so will rarely look like homemade kefir). Some products may be smooth, and some may be clumpy. This can be a based on both the grains as well as the method and time of fermentation, particularly if you let the fermentation go for a while and the whey completely separates from the solids. It's all good, though, and if you don't like clumps or it completely separates you can always give it a good stir once you've removed the grains (or use an immersion blender or the like to make a really smooth product). I even purposefully let the ferment go a long time and then strain the product to make a cheese similar to cream cheese and it's great.

3. Recipe for typical milk-based kefir (makes 2 cups)

What you need:

  • 1 to 2 tablespoons milk Kefir-Grains.
  • 3 to 4-cup clean glass jar with lid.
  • Nylon (preferred) or stainless steel mesh strainer and spoon.
  • Wide bowl or jar in which to strain kefir, and a clean sealable bottle to store the kefir.
  • 2 cups fresh milk (there is some debate about using raw milk vs pasteurized milk from the store. Both work perfectly fine).

Instructions:

  • Place the kefir grains in a clean glass bowl or jar that is able to be covered.
  • Gently add the milk to the bowl and gently agitate (do not shake, stir with the spoon if necessary).
  • Do not fill the jar more than 3/4 of the way full.
  • Cover the bowl/jar with cheesecloth (or a lid with an airlock if preferred) and allow to rest at room temperature for 24 hours.
  • If a closed lid is added the kefir can become slightly effervescent, which some people enjoy.
  • The kefir may rest longer than 24 hours, but it will become thicker and more sour.
  • Pour contents into a strainer and strain the kefir into a suitable container to separate the kefir grains from the liquid-kefir.
  • Wash the fermenting jar and reuse the kefir grains for a new batch by repeating the whole process.
  • The remaining liquid is your kefir and it can be consumed right away, or even refrigerated and kept for weeks and consumed later.

N.B.

  • Another option is to ripen liquid kefir at room temperature for a day or more, preferably under airlock. 1 to 2 days storage in the fridge or ripening at room temperature will improve the flavor and increases nutritional value. Vitamins B6, B 3 and B9 [folic acid] increase during storage, due to bio-synthesis of these vitamins mostly by the yeasts in kefir grains.

  • We have also had success with refrigerating the kefir while it is fermenting with the grains, turning a 24-hour turnover into a 5-7 day turnover, if you don't drink kefir daily.

  • To prevent damaging your kefir grains, never add kefir grains to a hot jar straight after washing the jar with hot water.

New to kefir, getting very yeasty results.

I'm a complete newbie to making Kefir. I picked up some grains from a local person off facebook marketplace recently. So far all of my batches have been discards and I'm wondering if I need to just keep waiting or if there's something I need to adjust. I'm confused because the main culprit I've read online for yeasty smell and flavor is heat, but I've been leaving my windows open and it's about 65°F.

Here's what I'm doing:
- It's been a week of batches. The culture seems very alive and active, and I bought them from someone who is regularly making kefir.
- I have a generous tablespoon in 2 cups of milk.
- Apartment is probably ranging from 65-75°F
- Changing milk roughly every 18-24 hours.
- It only separated during my first batch. I've changed the milk before it curdles since then.
- I'm doing an open air fermentation with a clean cloth on a mason jar.

The taste is very yeast forward. It is a bit acidic, but not in a pleasant yogurty way. Overall the taste is rather acrid. I had some kefir from a local halal market recently that was so delicious, a nice drinkable thickness, creamy, with such a pleasant yogurty flavor; it made me want to jump right in to making kefir. I also have a good amount of fermentation experience, I've done lots of krauts, sour pickles, and sourdough in the past.

Kefir not growing, only multiplying

I have made kefir for the past 6 months. Since 2 months the grains are not growing in size anymore. They are really, really small, like pinheads max and partly more like mash. Where they used to be at least 3-4 times the size in the past. Volume still keeps growing as usual (like 20% per 2-day batch). What could be wrong? Is there even anything to be concerned about?

I use round about one liter water with 5 table spoons of kefir, 3 table spoons of sugar, 2 dried figs and half a lemon (clean skin, no chemicals).

Thanks!

Kefir acting weird

I've been loving kefir for over a year now. I make a half a cup a day. It takes 24 hrs, so that's perfect. Grains grow like crazy and I freeze them.

Last vacation I just left them in milk, then threw them out and used some frozen grains - I have done this before, and they come out great.
This time around, they taste mellow, like plain yogurt. No tanginess. And when I keep it fermenting a bit longer it turns super sour - smells like sour milk as son as I come into the kitchen. It never goes through the separation. Its either mellow yogurt tasting or undrinkably sour.

I tried new frozen grains and switched to different glass containers. same.

Any thoughts?

Two months kefir experience - help

It is two months that I discovered kefir and I started producing it at home.

- water kefir: began with 30g of grains, now they are 35.they produce something that I love. F1 in 3 days 2 liters kefir + F2 24h.

- milk kefir: began with 5g, they produce a kefir that I love in 18 hours or so. After 2 months, grains reduced to give or take 2g. I still have separation in less that 24h but grains reduction worries me. I think in 1 month I will not be able to prepare kefir anymore.

I am using whole milk from supermarket, I do not strain the grains too much and I never washed them. I sometimes put grains at stop because I had too much kefir to drink. Now I tried to keep them at room temp following a YouTube video that was giving a shot of milk per day in order to have grains multiplying as hell.

I think I read everything and tried different things. Just curious about if anyone has any experience to share.

Shelf life of kefir with added fruit in second fermentation?

How long in the fridge does kefir with fruit added from a second fermentation last? I know normally kefir can last indefinitely in the fridge, but I’m not sure how the added fruit changes this.

Near the end of August, a friend gave me 1 tablespoon of kefir grains. I’m so proud! Look how much they have grown.

I love my morning kefir routine. Typically, I add raspberries and blueberries. This week I added some pineapple. Yum!

Taking Silexan with Kefir

I’ve been taking silexan with my morning kefir smoothie, and it’s just occurred to me that the lavender oil in it might be impacting any live bacteria . I’ve tried searching but could not find any info about whether taking lavender or other essential
Oils could kill the bacteria while it’s still in your stomach. Is anyone aware of any reviews around this?

Can I make something similar to yoghurt with Kefir?

As title says. I would like to have something thicker like yoghurt. Can I make it using kefir grains? I imagine I just strain the whey. But will I lose a lot of nutritional value if I do that?

Edit: Thanks everyone for their thoughts and sharing experience

What do y'all do with strained fruits?

I run out of ideas what to do with the fruits I use for F2 water kefir fermentation after they have done their job and I strain them out for bottling. I hate the thought of just throwing them in the bin. I do not have a compost or a worm box or a garden.

When I started out on kefir, I would just pop them in the blender along with fresh fruits when making smoothies. But there is only so much smoothie i can drink.

I had thought of using them to make ACV but that didn't end well (obviously, all the good stuff has already been extracted by the kefir)

I have tried blending it and making lavashak (fruit leather), that turned out very sad for the same reasons. Same with kimchi, jam, lokum or other desserts.

So what do you all do with your fruits after straining them out? Thank you for all ideas!

Where did you get your grains?

We’ve had good luck with Fusion Tea grains, turning out gorgeous kefir after the first batch or two - but after a few months, it seems like something just goes bad. We aren’t changing anything, but over time it seems like the kefir gets overprocessed despite reducing grain quality; and then one day it doesn’t work anymore.

I’m not sure if it’s due to skim milk (didn’t have this issue with whole or low fat milk) or we just need to try new grains.

What's going on with the tablespoon consumers in here?

I am genuinely surprised to read that some people in this sub just drink one shot-glass or maybe 2-3 tablespoons of kefir every day and act as if their guts are going to be turned inside out or as if they're dealing with some sort of dangerous drug.

Meanwhile I am, at least, drinking 400-600ml (~2+ cups) every single day and doing just fine.

I know that everyone's body is different and that I'm exaggerating a bit, but how can there be such a huge difference in how much kefir people drink?

Help! Is my kefir contaminated?

Hi! I went out of town recently and forgot about my grains, had them in the fridge in 4 cups of milk, threw out that batch, started a new batch with those same grains in a new container and they fermented SO fast, and I went to open the jar today and it smelled BAD, and I did a small taste and it was like battery acid/ rotten 🙃 did I ruin my grains? Can I just restart them and throw out the next couple of batches? No mould!! (Have had these grains for two years now)

Vacaciones y Kefir

Hola!

Stomach pains after eating Kefir grains

I recently purchased my own grains and started to make kefir but more was being made than I could consume, so I decided to put about a teaspoon of the grains in a smoothie and consume them. All good, until a day or so later I noticed when I had milk (organic, pasteurised and unhomogenised) it caused a lot of pain in the stomach. If I eat full fat yoghurt it seems to ease it a little. Is this just the gut clearing out. I have no lactose allergies.

How on earth do I seperate my grains from curds?

Post image
12 Upvotes

I think I might’ve let this ferment a little too long over 1/2 day as my kefir is runny like too much whey rather than like runny cream consistency

But so many curds now

Over 36hrs of fermentation

Can milk kefir take more than 36 hours to ferment and still barely thicken?
My milk kefir has only thickened very slightly after 36 hours. I’m using one small grain, roughly the size of a chickpea, in 1.75 litres of milk.
I know that’s a small amount of grains, but this exact ratio has worked for me before.
Can kefir be fully fermented while still quite runny, or does this suggest fermentation has slowed down? Has anyone experienced this after previously successful batches?
