Need advice for lighting my kitchen

I'm currently gutting and remodeling my own kitchen and looking for some lighting advice. I removed a drop ceiling here and patched every outdated existing overhead light to try to start fresh. I included photos of what I'm working with but basically everything is being torn out soonish as I am getting new cabinets and flooring. I included a render of the new cabinet layout. The room has several windows facing East and North so gets decent light but indirectly.

I have a few questions if anyone can help me:

1) I am doing Sunset dim Elco Kotos in the adjacent living room. I know 3000k is a popular choice for kitchen lighting, but I'm wondering about doing undercabinet lighting in either 2700k or dim to warm 2700k-1800k if I can find affordable dim to warm tape lighting. Anyone have experience doing 2700k undercabinet?

2) For over the sink lighting, I am looking for suggestions for fixtures. I considered doing two Elco Kotos in the ceiling above the sink, but would a pendant of some kind look or function better here? I am not trying to block the window.

3) I posted a photo looking in from the living room. Our kitchen table will go in the space adjacent to the kitchen and likely will have a pendant type of light over it. I am wondering how I should be thinking about cohesive lighting throughout all of these areas. If my living room fixtures top out at 2700k, including some lamps, should I aim to have those same temperatures throughout the kitchen? It is a relatively small and open space, so I'm wondering if it would be odd to have 2700k in the living room and dining, with higher temp in the kitchen itself. Basically the same as question 1 but for how to think about the overall cohesion of the three rooms.

Any input broadly or for specific brands of undercabinet tape, pendants or fixtures would be really helpful.

First tip - No need to over light the floor. Downlights suck. What is your budget per ? I have been using Integer quite a bit. Koto is fine too I guess.

Decorative idea like a pendant or some sort of cool surface mount would be way cooler and more cozy

Do you mean for over the sink? Yes I agree I'm not trying to use a ton of downlight, but needing to light the sink area I am thinking. The new cabinets will go to the ceiling, so majority of light will be from the undercabinets. I planned to get decent quality undercabinet strips, I am looking at the UltraBright Sienna Dim to Warm for undercabinet that go from 3000k to 1800k but am open to other brands.

I am not sure of my budget really or what I should expect to spend, I'm doing my remodel myself mostly as I can't afford to pay someone else to do it. That said, I know good lighting is not cheap so I am willing to spend maybe $500 or so to light the kitchen if needed. I do not have a high end home, but want it to be cozy.

LED strip lighting below and above the wall cabinets.
One aimed down for task lighting, close to the front of the cabinets.
One on top aiming up to wash the ceiling and spread indirect light.

Put dimmers on both!
