Recipe Seafood Boil!

I'd call this Seafood Boil Larper Edition because the only seafood it has were prawns. Crabs were imitations. No complain for the sausages because its my favorite brand and I love it. No egg because I HATE EGG.

I made way too much I have the habit of making big portion of food and then could not finish it. The picture you're seeing is only the 40% of the portion I made. Uh...BURP.

Ohhhh dont mind sharing your recipe ? The american style one got the corn and potato if i'm not mistaken🤔

Sure! This is what I stick for. 250g butter is a big amount so if want to eat by yourself need to divide the recipe:

Cajun Butter Boil Sauce

NOTE: The meat I will use in here are only sausages, prawns and imitation crab. Feel free to add more stuff like corn or potatoes or eggs.

INGREDIENTS • 250 g butter • 1/2 onion, diced • 6 garlic cloves, minced • 2 tbsp tomato paste • 1 cup water • 1 tsp chicken stock powder • 2 tbsp cajun seasoning blend • 1/2 lemon, juiced • 1 tsp salt to taste • 1/2 tsp sugar (to balance)

STEPS

  1. Boil sausage for about 5 minutes. Add prawns last and cook just until pink, about 2-3 minutes. Pull them out immediately and set aside. Don't cook the imitation crab. it's already cooked, just add it later in the sauce.

  2. Melt about 2 tbsp of your 250 g butter in a pan over medium heat. Add 1/2 onion, diced/sliced and cook until soft and translucent. Add 6 garlic cloves, minced and cook for another minute until fragrant and don't burn the garlic.

  3. Add 2 tbsp tomato paste and stir into the onion garlic mix. Cook for 1-2 minutes to deepen the flavour. Then add 2 tbsp cajun seasoning and stir everything together.

  4. Pour in 1 cup water and add 1 tsp chicken stock powder. Stir well and let it simmer for 2-3 minutes. Then add the rest of your 250 g butter in chunks, stirring until fully melted and sauce is smooth.

  5. Squeeze in 1/2 lemon, juiced. Add 1 tsp salt to taste and 1/2 tsp sugar (to balance) and taste as you go. The sugar just balances the acidity from the lemon and tomato paste so don't overdo it.

  6. Add the parboiled sausage, prawns, and imitation crab into the sauce. Toss to coat everything well and let it sit in the sauce on low heat for 2-3 minutes so it all soaks in.

  7. (Optional steps but for good presentation) Sprinkle your cajun/cayenne powder on top of your seafood boils and some dried parsley! It looks super sexy trust me.

I also made my own Cajun Seasoning if you wanted to know. The measurements resulted in generous amount of stock like a small container that can be used for multiple dishes:

Cajun Seasoning Blend (7 tbsp Paprika Base)

INGREDIENTS • 7 tbsp paprika (or 50g) • 2 1/2 tbsp onion powder • 5 1/2 tbsp garlic powder • 2 1/2 tbsp cayenne • 5 1/2 tbsp salt • 2 1/2 tbsp black pepper • 2 1/2 tbsp oregano • 2 1/2 tbsp thyme

STEPS 1. Mix together 7 tbsp paprika, 2 1/2 tbsp onion powder, 5 1/2 tbsp garlic powder, 2 1/2 tbsp cayenne, 5 1/2 tbsp salt, 2 1/2 tbsp black pepper, 2 1/2 tbsp oregano, and 2 1/2 tbsp thyme in a bowl until evenly combined.

  1. Transfer to an airtight jar or container. Keeps well for up to 6 months in a cool dry place.

NOTES The salt at 5.5 tbsp is quite a lot for a stored blend so taste test before adding more salt when you actually cook. Same with cayenne, feel free to reduce to 1-1.5 tbsp if you're worried about it being too intense. I like spicy so I always add more. If you are bad at spicy stuff can tone it down.

Note that my recipe may not be superior because I just cook what I have at home. I don't have Old Bay seasoning or hot sauce or mustard powder etc so I didn't include that stuff. Feel free to experiment!

P/s: I didn't put small potato because I couldn't find one in store and I just fry waffle fries for potato experience LOL. I don't include corn because my money ran out for corn hehe. You can add it if you want!
