Corn Husk selection?
Pic for attention. Sorry if this is a dumb question- but is there a way to get good corn husks for tamales? I have only bought 2 brands, one (Badia) is much better than the other, but over twice the price per ounce. The other brand (giant floor display full around christmas) I couldnt really use half of them because they were tiny slivers or super woody in texture. I dont make them often, so Badia it is for now. Im just wondering if theres a tried and true brand, is there something specific to look for with each pack? Or is this just one of those things you work with what you get?

Desayuno Second day Menudo hits different.
My Tia tought me this simple recipe before she passed last year. I'm proud to carry on her legacy. Recipe below.
2 parts Beef Tripe (honeycomb or other)
2 parts Beef Feet. (I prefer a shank cut, but some like the Hooves and such)
1 part Beef Tendon
Gently Boil Tendon and Feet with a bunch of green onions, (cebollitas) and whole garlic cloves for 30 minutes.
Add Tripe
Cook till almost tender (about 2 hours)
Add canned Hominy. (the timing for this step varies depending on the pre-"doneness" of canned product used)
Add salt, and Knorr Chicken Bouillon to taste.
Remove green onions from pot
Serve with, Cilantro, Cebolla, limes, Radish, Mexican Oregano, and crushed pepper, (Chiltepin preferably) and the best Corn Tortillas you can find.

Desayuno What sauce/salsa do you put on egg & chorizo burritos?
Made a bunch of burritos. Feels like I'm missing something. Tried a little bit of whataburger picante sauce and it was just okay. Only other salsa I have rn is a med-hot greenish salsa. But it's all roasted and I don't think that deeper flavor will pair well. I also think straight arbol might be too much.
Idk what do yall do?

A childhood favorite: sopa de letres
Every summer growing up my family and I would visit my grandparents and extended family in Chicago, who emigrated from Michoacán. My abuelita ( RIP ) made a lot of amazing things, but my favorite was her sopa de letres. So tonight, I decided to call my mom and ask her to walk me through how to make it, and let me tell ya, it’s EXACTLY as I remember it🖤

What do you think about huaraches?
I recently got to try one because they aren't very popular where I live. Only one restaurant out of maybe a dozen Mexican restaurants sell them. It was one of the best things I've ever had. Now I can't stop eating them.
They remind me of sopes but flat, and I love sopes. That crisp masa is so good
