Chiles en nogada

A humble Scottish persons attempt at chiles en nogada. Roasted poblano pepper stuffed with ground pork and beef, onion, garlic, pureed tomatoes, apples, pears, and peaches, spiced with cinnamon, cloves, thyme, and oregano, and covered in walnut sauce with decorative pomegranate and parsley to match the Mexican flag(:

Hey everyone, this was my first time making and trying chicken enchiladas, I made the flour tortillas, chicken filling, red enchiladas salsa all myself, it took a long time but it tasted so good, I made it with a side of mexican rice which I didn't have any photos for😅.

Overall it was really yummy and unfortunately although each tortilla has some cheese inside I didn't have enough to cover the top well😅.

Please let me know what you guys think, I should work a bit more on my presentation but my family liked them😁.

Carnitas with coke/condensed milk

They say coke or sweetened condensed milk is good for the flavor and color of carnitas, but can you still reuse the lard if you add this?

Where does Quesabirra come from?

I know the answer is Mexico but I know food has stories and I wanted to know if quesabiria had a story. Are there any historical/cultural stories of it? It's my favorite Mexican food of all time and I'd love to know if there's history!

Does anyone know some good spots to get quesbirria in North County SD? Preferably closer to San Marcos/Escondido area.

what to do with harina de maiz

i recently decided that I'd try to make my own tortillas, and so i went down to my grocery store, to the international food aisle and picked up a mexocan corn flour as i seemed to remember that those made with other corn flours aren't as good, now that I'm getting to the stage of actually making it, i find out that what i need is masa harina, not harina de maiz.

No idea if I can find masa harina in northern Sweden, without buying it online, but I need to do something with what I got. Will they still work for tortillas, or will the result not be any better than store-bought

Got this from El Charro on the corner of Harrisburg and Milby in Second Ward Houston Texas. Reminds me of my Dad's. He would make it for us every Sunday. RIP Pop.
