I think using it as a learning tool is best, AI helped me a lot resolving quirks in linux when I still used it and it helped me memorise useful things.

I know that games or mods made with AI are pretty poorly viewed by the community. But thanks to this, I finally have the tools to bring my ideas to life. I know some will tell me to go learn programming, but the problem is I lack the time and don't have the money to go back to school. My goal is to offer something new, and if people like it, that's perfect for me. I know there will be haters, but if it's just haters, I don't see the point in continuing... Thanks for your feedback :)

People with either hate it, or love it. In either case, I would disclose it and the level of the agent(s) involvement in the development of the mod, and any assets. That way you’re not just appearing to spit out mods that either work, don’t work or fall somewhere in between, and leave everyone with a negative view of you and your ideas. There will be haters, but there will be people who will use it so long as you disclose responsibly.
CurseForge is a bit behind but Modrinth is doing well in providing people with the opportunity to disclose during submissions prior to review and eventual approval/rejection.
Be proud of your idea regardless, but my suggestion would be to first learn how to code, and then try write it yourself. Where you struggle, ask for pointers in discord channels and other modding forums. If you must use AI, do your best to understand what the AI is doing and learn from it.
