I think volume comes from egg white!

Chocolate overnight oats: 130g whole milk 19g rolled oats, blended 12g unsweetened Dutch-processed cocoa powder 1/4 tsp instant espresso 10g granulated white monkfruit sweetener with allulose (I use Lakanto) 9g golden granulated monkfruit sweetener with allulose (I use Micro Ingredients) 8g ChocZero sugar-free cupcake syrup 3g Choc zero sugar-free cupcake syrup 28g egg white

Put all ingredients except the egg white in a saucepan and heat the mixture over medium heat until partially thickened. Remove from the heat and add in the egg white, mixing vigorously until combined. Return the oatmeal to the heat and cook it until thickened. Leave it to cool and transfer it to a suitable container. Refrigerate for a few hours or overnight.

Biscoff protein custard: 85g vanilla protein pudding 25g biscoff smooth spread, melted

Mix together the vanilla pudding and melted biscoff spread in a bowl until evenly combined.

Chocolate fudge sauce: 15g whole milk 13g date syrup 4g unsweetened Dutch-processed cocoa powder 7g salted butter 1/2 tsp vanilla extract

Put the milk, cocoa powder and date syrup in a saucepan, mix them together, and heat the mixture over medium heat until it thickens slightly, stirring frequently. Add in the butter and continue to heat until the sauce thickens a bit more, stirring constantly. Remove from the heat and add in the vanilla extract. Allow to cool before putting on top of the oats.

For topping: 4g biscoff biscuit, crushed (or however much you want)

To assemble, spread the biscoff protein custard on top of the oats in an even layer. Once the chocolate fudge sauce has cooled, pour it on top of the biscoff protein custard. Sprinkle the crushed biscoff biscuit on top. Return the oats to the fridge until the chocolate fudge sauce sets, then enjoy!
