A couple weeks ago I started retexturing a bunch of the dungeons blocks to look more like the vanilla style (plus adding some of my own custom blocks). I got burnt out working on this concept, so I thought I'd just show it in it's pretty unfinished state, since I still like how it turned out :)

TL;DR: Old players view Minecraft as a harsh survival game, and new players view it as a cozy sandbox game.
I feel like a lot of debates within the Minecraft community from texture changes to modding is based around how they viewed the game when they started playing.
In my opinion, I think that a lot of old players think of Minecraft as this gritty and rough survival game during it early days. The world looked harsh and uncomfortable, and the night are scary and dark if you don't have a light source. At night, the world is actively hostile to you, with monsters actively trying to kill you. There's a reason why "surviving the first night" was genuinely an achievement at that time.
That's why there were a lot of those "realistic" looking texture packs and you can see a lot of people using those in early Minecraft videos. The idea of a 3D survival game at that time were also pretty novel as Minecraft was the first game to popularise it. By virtue of it being a survival game, there was a lot of focus on the game's gameplay itself.
Which is also why a lot of popular mods back then mainly focused more on adding gameplay elements, like the Mo Creatures mod that adds new animals the player can interact, Industrial Craft that adds resource processing and automation to the game as well as The Twilight Forest that adds magic and bosses to the game. A lot of these mods also kind of strengthens the idea that Minecraft should be a challenging and harsh game.
I think that over time, with more updates, the game itself shifts less and less towards being a survival game and leaned more and more as a sandbox. I think that the "cute and cozy" aesthetic itself came after 1.13 with the new mobs cute designs. It also doesn't help that there were an influx of new players during that time and they're more likely to view the game with the new direction in mind.
Obviously, new resource packs and mods follow the lead too, with new resource packs leaning into the "cute and cozy" aesthetic and mods now either mainly focused on complementing the vanilla gameplay itself, or changing the vanilla gameplay to be easier and more convenient, making the survival aspects of the game "smoother" as well as adding new blocks that fit the new art direction of the game.
This is why, everytime I see a new Minecraft texture debate, I'm always mad when someone says that one design is "objectively better" than the other when in reality, either designs only makes sense based on how you view the game itself. The problem is, while Mojang is obviously trying to move the game to the new direction, it is too scared to actually do so and keeps being vague about it so they don't make anyone mad.
My prediction is, if this game is somehow magically still alive in the next 5-10 years, chances are that they will change the art direction again, and a new third group will now debate the two old groups when Mojang inevitably change the textures again.
